Let’s get cooking!


Food hasn’t been my favourite topic lately (because it troubles me any time I eat) but today I had a particularly good day and made the best of it.

I came up with a few dishes and a dessert, so allow me to show you!


Peanut butter and cream cake.


I made these last night, and had one for breakfast.

I brought one over to my friends PJ & Sophie and they liked it as well, which of course made me happy! It’s very spongy and tasty, and you can definitely just make a big one but I didn’t have the tin, so 4 small ones were just as great.


I started by mixing by hand sugar and an egg, adding all the liquid things one after the other (peanut butter, cream and honey – the last one is just an extra for flavour, add as much or as little as you like).

Then I went on and added flour, baking powder and cinnamon, mixing it until forming a paste.


I made up this recipe from scratch, so it was lucky that it turned out this good!

I placed the mixture on my moulds and popped them in the oven for 25 minutes, on 175*C.


And then they were ready. I sprinkled some icing sugar on top, and ate one right away!


Veggie balls with polenta.


Remember when a little while ago I made pasta balls? Someone suggested to use potatoes to make them round and easier to cook without breaking apart. That was a brilliant idea.


I gathered some mixed vegetables, potatoes and sliced polenta.


I started by cutting into very tiny pieces all the veggies and boiled them for 15 minutes so they could soften.


Then I moved everything into a pan and cooked it some more.


This way, it was very easy to smash it.


I also cooked the polenta with some salt and olive oil.

While waiting for that to be ready, I took the veggie mash and using my hand (let it rest so it gets a little colder first) I formed two balls, which I then coated in egg and bread crumbs.


Look how perfect this look! I was so pleased. haha


I cooked them in a pan with oil for just a few minutes, and served them with some mayo on the side.

This was honestly the best meal I’ve eaten in a while!


Creamy gnocchi with avocado and courgettes. 


In the evening is when the pain and nausea comes. For the first day in almost two weeks, today, I have not taken any medicines, and I was surprised to see that I had somewhat of an appetite anyway, and I’m doing pretty good so far with my digestion.


I didn’t want to push it tho, so I have only cooked myself a small dish of gnocchi, for safety.


I first cut into pieces an avocado, added some salt and olive oil, and very few shallot bits.

Then I cooked the gnocchi, added the cream, cooked the courgettes and added everything together into a bowl.


This was super easy and fast to make, plus all the ingredients go so well together!

That’s about it. I can officially say that today, food wise, was a successful day. I love cooking and baking, so having to put it aside for more than a month now has been hard, but at least today I got to enjoy both making it and eating it. I’ve missed it!

By the way, I should get my allergy/intolerance test results tomorrow; I’m really curious to see if my stomach pain is caused by any specific foods. As usual, I will let you know.

    Those cakes are beautiful! I think mini cakes are much more fun and perfect to bring to friends for get-togethers. The potato balls look yummy too, although I’ve been suffering from an illness for awhile and it’s caused me to loose my appetite and looking at certain foods make me queasy (potatoes or anything with oil seem to be a problem with me 😦 ).

    I’ve been in school studying culinary arts, and one of the first classes we take is safety and sanitation. After reading and following what you’ve been experiencing, I think you should consider researching foodborne illnesses. Some of them are simpler than others and go away on their own, while others are really nasty and can result in serious issues if not taken care of… since you haven’t figured it out just yet, foodborne illnesses could be another rabbit hole worth checking out. It’s very possible you catch something during your past troubles.

      You make a really good point–perhaps there might be some harmful bacteria in the food she purchases or from the way she prepares them (not to say that Marzia is unsanitary and doesn’t make good food choices! As you mention, her food is delicious AND healthy (・ω・ ) ).

        Yes, I was thinking she caught something on a trip, but she might have eaten something she made and contracted a food borne illness. Or it wasn’t even human error, but she purchased a bad product. There’s several possibilities, but I think food borne illnesses are worth checking out.

    Oooh I need to try all of these, especially the gnocchi,/avocado/courgette dish! I’ve never had polenta so I’m not sure if I like it. Also I’m so curious to hear about your final test results! I want to say I hope they are all good and clear but at the same time I’m sure you would like to finally have an answer.

    Marzia, I’m worried about your stomach aches and I want to suggest something.

    Please take an ultrasonography exam and check your coagulation factors. I knew a girl that died with pulmonary embolism because she developed a blood clot in her crotch due to taking the pill and her symptoms were also feeling nauseous, vomiting, having a lot of stomach cramps and some leg pain.

    This is very serious so please mention that to your doctor. Dont let the doctor tell you that you’re wrong. This girl was a baillarina and she was also very healthy and no one thought she had a problem, but she ended up dying. I dont want anything bad to happen to you so please check this blood clot problem because blood clots CAN kill a person in a matter of minutes.

    I am not a medicine doctor, but i am a vet student. Please go check that, even if it’s not a blood clot, ok? I like you a lot and I want you to feel better.

    All of those meals made me drool! They look absolutely stunning and I want to gobble all of them up right now! I really want to try the peanut butter and cream cake since peanut butter is on one of my absolute favourites. I love how you can just create recipes from scratch that visually look amazing and probably taste as good.I’ve never had gnocchi before just because I don’t know what to eat it with but now I’m going to try your recipe and hopefully love it!     Super happy that you had a great day of food! I had tried making the pasta ball before; however, it didn’t turn out as good as I hope. Probably was because I didn’t have bread crumb, I used flour instead… I will definitely try with potato next time : ) Also, the peanut butter cake looks so delicious! I still have lots of peanut butter at home and I finally know what I can do with it!

    Prova a farlo anche durante la vita normale, dimenticati di chi sei e vivi semplicemente il momento.
    E se ti chiedi perché amo così tanto la mente umana? Beh, lavoro nella finanza, sono costantemente pronto e disposto a sfidare i miei limiti e sperare che i miei limiti siano più forti e alti della mia controparte. Non conosco molto di ciò che conoscono le persone normali ma conosco molto di ciò che non conoscono le persone normali. As simple as that. 😀 😀

    I don’t think you should be eating dairy such as cream (its very heavy for stomach, not good for your health eathier) when you have such problems… :c

    I know this might be a silly question but where did you buy those coloured gnocchi as I have never seen them before? I live in in London so hopefully should be able to find them in one of the supermarkets around here but looking online I havent had any luck so thought I would try asking you.

    Looks so great! I’ve never really considered eating polenta but it looks tasty so I’m going to have to give it a go 🙂

    By the way, I do something similar to your peanut butter cakes by adding banana and oats to make a mixture that I use to make cookies – its a great quick eat for breakfast and a super way to start the day with something sweet but still healthy (may not with the clotted cream though hehe)

    I definitely have to try the cakes out! I don’t know if it’s a product of American culture, but there is so much more dairy and bad fats in our “normal” food. I wish more people knew and enjoyed cooking with more vegetables and healthy foods. I found out that I’m lactose intolerant, and I’m really struggling to get out of my old ways now. I really enjoy seeing your recipes like this for inspiration!

    Hey Marzia I don’t know if you’ve found out the reason for your stomach problems but I know my cousin had the same or similar symptoms and she was diagnosed with Chrone’s disease. I would Google it and decide if it’s something that may relate to your troubles. Good luck and be well 🙂

    I made it this and it was really good! Even my dad had some, and he doesn’t like cakes usually. I made mine in a rose mold, and I think it looks adorable! Thanks for the recipe Marzia!

    Note: If any of you don’t have clotted cream, just mix heavy whipping cream and butter together until it’s the same consistency. That’s what I did and it works!

    Huuuuuum, I’m a little concerned about those little cakes. Did somebody else make them? I’m curious about the taste, ’cause it seems really sweet! I mean, four out of eight ingredients probably contain sugar and they form more than half of the batter. I’ve already got from her other recipes that Marzia has a huuuuge sweet tooth. What do you think?

    The veggies balls are a great idea! Pretty sure you can feed this to kids and say it’s nuggets :p
    And adding spices might make them even better!

    I live in America so some of the brand names threw me off a little bit, but I love these recipes!
    I am not 100% sure what health issues you have going on, but I too have a very delicate stomach. I feel as though I have to eat very bland foods or I will get an upset stomach.
    I would love more posts with what groceries you buy and what meals you eat, and I will see if these help my stomach 🙂
